Coconut Snowball Energy Bites

Give these snowball inspired energy bites a try on your next snow day! These yummy treats will keep you full through all of the sledding, snowball fights and snowman building!

All You Need!

  • 2 cups pitted medjool dates
  • 1 cup shredded coconut
  • ⅓ cup cocoa powder
  • ½ cup almonds
  • 1 tablespoon Hy-Vee coconut oil
  • 1 teaspoon vanilla extract

Things to Grab!

  • Food Processor
  • Tablespoon
  • Measuring cups
  • Measuring spoons

All You Do!

  1. Pulse almonds in a food processor until roughly chopped.
  2. Add the rest of the ingredient to food processor and pulse until fully combined.
  3. Use a tablespoon to scoop out mixture then roll into balls.
  4. Coat each ball in shredded coconut.
